Flourless sugar cookies

I came up with these cookies while looking for a simple recipe that I could make that didn’t require gluten free flour blends or any xanthan gum. Be sure to make these ahead of time as the dough needs to be refrigerated for at least an hour before baking. These cookies seriously melt in your mouth and the best part… only four ingredients!

Melt-in-your-mouth Flourless Sugar Cookies

2 cups cornstarch (I use Kingsford, available at Walmart for cheap)

1 cup sugar

1 egg

1/2 teaspoon vanilla extract (I prefer Kirkland brand from Costco)

3/4 cup (1 1/2 sticks) butter, room temp

*Using hand mixer, combine all ingredients until well blended. Place dough in refrigerator for at least an hour.

*Preheat oven to 375 degrees. Line baking sheet with foil.

*Roll the dough into 1-inch balls and place on the cookie sheet. Flatten with fork tines or the bottom of a glass.

*Bake cookies in center rack of oven for 7-10 minutes depending on the size of the cookie. Let cool on cookie sheet for a minute before removing to cooling rack. Enjoy!

*Dairy free option: substitute 3/4 cup shortening for the butter.

    How many cookies did you get in your batch? I have to make cookies for a student in my class and I don’t need a bunch….
